Melted white chocolate coating meets creamy peanut butter in a double boiler, then gets poured into peanut molds and chilled until firm.
The whole process takes minutes of active work, and you’ll end up with about 6 dozen little treats that look like they came from a candy shop.
Kitchen Tips
- Use a sugar-free white chocolate coating to keep these truly diabetic-friendly
- Don’t let the water in your double boiler come to a full boil, or the coating can seize up and turn grainy
- Pop the molds in the freezer rather than the fridge for cleaner release and faster setting
- Store finished peanuts in an airtight container in the fridge for up to two weeks

Directions
In the top of a double boiler, melt coating over hot, not boiling, water.
Add peanut butter and blend until smooth. Fill peanut molds almost full and chill in freezer until firm.
Turn over and tap peanuts from molds.
Makes about 75 peanuts.
