This simple candy bark makes portion-controlled treats accessible for diabetics while delivering satisfying crunch and chocolate flavor.

Diabetic-friendly chocolate coating melts smooth in a double boiler, then crunchy cereal and watermelon seeds stir in to add texture and bulk.

The mixture spreads thin on waxed paper and firms up into crisp sheets that break into irregular pieces, perfect for nibbling or sharing.

Chef Tips

  • Use a double boiler to melt the chocolate gently and prevent scorching or seizing
  • Spread the mixture thin for the crispiest bark that snaps cleanly when broken
  • Try different add-ins like chopped nuts, sunflower seeds, or puffed quinoa for variety
  • Store in an airtight container at room temperature for up to 2 weeks
  • This makes a thoughtful homemade gift for friends managing diabetes
