Chocolate Chip Cream Cheese & Sour Cream Brownies
Submitted by kdrolet
Chocolate chip cream cheese brownies layered with a sour cream chocolate batter, a sweetened cream cheese ribbon, and a top scattering of chips. Fudgy, tangy, three textures in every bite.

The sour cream is doing the quiet work here. It thins the batter just enough to spread, adds a slight tang that cuts the heavy sweetness, and keeps the crumb soft and almost cake-like instead of turning into a dense fudge slab.
Melting the chocolate, margarine, and water together for a full minute of boil is an old-school technique that fully hydrates the cocoa solids before flour ever enters the bowl. This builds richer, deeper chocolate flavor than just stirring melted chocolate into batter.
Look for a barely-set center when you pull them. The cream cheese layer firms up dramatically as it cools, and a slightly underbaked center becomes the silkiest part of the slice.
Pro Tips
- Bring the cream cheese fully to room temperature before beating with sugar, cold cream cheese leaves lumps that bake into white spots.
- Line the pan with parchment paper leaving an overhang, so you can lift the whole slab out and slice on a board for clean edges.
- Cool completely before cutting, ideally chill for an hour. Warm brownies tear, chilled ones slice clean.
- Swap the margarine for unsalted butter for richer flavor, the structure works the same way.
Variations
- Add a teaspoon of vanilla extract and a pinch of espresso powder to the cream cheese layer for deeper flavor.
- Use white chocolate chips on top instead of semi-sweet for a higher contrast against the dark base.
- Stir a half cup of chopped toasted pecans or walnuts into the chocolate batter before layering.
