20 minSnow crab and sharp cheddar layered over crustless white bread, covered with a seasoned egg-milk custard, and cooked entirely in the microwave. In about 15 minutes you’ve got a set, silky custard with pockets of sweet crab and melted cheese throughout.
This is essentially a crab strata without the overnight soak. The bread on the bottom absorbs the custard as it cooks, puffing up into a soft base layer that supports the crabmeat and cheese.
The cayenne pepper is subtle but important. Just a pinch cuts through the richness of the eggs, milk, and cheese, keeping each bite from feeling heavy.
Kitchen Tips
- Thaw frozen crab completely and squeeze out excess moisture before layering. Wet crab releases liquid into the custard and makes it watery.
- Use crustless bread so the base stays soft and uniform. Crusts create tough, chewy spots in the finished dish.
- Cook covered in the microwave. The trapped steam cooks the custard evenly from all sides.
- The custard is done when it’s set but still has a slight jiggle in the center. It firms up as it rests.
Variations
- Swap snow crab for lump crabmeat or even canned crab for a more budget-friendly version.
- Add a layer of sauteed spinach between the bread and crab for color and extra nutrition.
- Use Gruyere instead of cheddar for a more refined, nutty flavor.

Directions
Place bread slices in the bottom of a lightly greased, shallow, 2 quart, heat-resistant, non-metallic casserole dish.
In a small bowl, combine crab meat, ½ cup of the cheese and salt and pepper to taste.
Spread on top of bread slices.
In a large mixing bowl beat together eggs, milk, ½ teaspoon salt and cayenne pepper.
Pour egg-milk mixture over crabmeat and top with remaining ½ cup cheese.
Heat, covered, in microwave oven 15 to 18 minutes or until custard is set.
