10 minThis cilantro chili dressing blends up in under a minute and packs a punch of bright, herbaceous heat. Green chilies, fresh cilantro, lime juice, garlic, and a touch of honey all go into the blender and come out as a smooth, vibrant green sauce.
The honey balances the heat from the chilies and the acidity from the lime without making the dressing sweet. It rounds everything out so you taste green, fresh, and spicy all at once. Adjust the garlic up or down depending on how forward you want it.
This dressing works on more than just salads. Drizzle it over grilled chicken, use it as a taco topping, toss it with roasted vegetables, or thin it out slightly for a dipping sauce.
Chef Tips
- Blend until completely smooth. Chunks of garlic or chili will make the dressing uneven and give you spicy surprises.
- Taste and adjust the lime-honey balance before serving. Some limes are more tart than others.
- Keeps well in the fridge for 3 to 4 days in a sealed jar. The color may darken slightly but the flavor stays good.
