This cilantro chili dressing blends up in under a minute and packs a punch of bright, herbaceous heat. Green chilies, fresh cilantro, lime juice, garlic, and a touch of honey all go into the blender and come out as a smooth, vibrant green sauce.

The honey balances the heat from the chilies and the acidity from the lime without making the dressing sweet. It rounds everything out so you taste green, fresh, and spicy all at once. Adjust the garlic up or down depending on how forward you want it.

This dressing works on more than just salads. Drizzle it over grilled chicken, use it as a taco topping, toss it with roasted vegetables, or thin it out slightly for a dipping sauce.

Directions

Place all of the ingredients in a food processor or blender.

Process until smooth.

Use fresh green chilies, or dry cilantro from a jar (a little less than ¼ cup), lemon juice instead of lime, and no pepper.
