25 minThese little cheese biscuit bites are the kind of appetizer you bring to a party and leave with an empty tray. Sharp cheddar beaten with butter forms the rich, savory base, while finely chopped onion and parsley add freshness to each golden morsel.
The dough comes together fast. Beat the cheese and butter together, add the egg and water, then fold in the seasoned flour mixture with the onions. Drop by small spoonfuls onto a cookie sheet and they bake up puffy and golden in 15 minutes.
The batch makes about 96 pieces, which sounds like a lot until you watch them disappear. The good news is they freeze perfectly. Bake a big batch, freeze the extras, and reheat them from thawed in 5 minutes whenever you need a quick snack or appetizer.
Pro Tips
- Use sharp or extra-sharp cheddar for maximum flavor. Mild cheddar melts well but tastes bland in this small a bite.
- Drop them small, about a teaspoon each. These are meant to be one-bite morsels, not full-sized biscuits.
- The paprika adds color more than heat. Don’t skip it or the morsels look pale.
- Bring the butter and cheese to room temperature before beating for a smoother, more even dough.
