The ‘berries’ in the title are wheat berries, the whole intact grain of wheat before it gets milled. This is a fresh-milled whole grain waffle recipe where the grains go straight into a blender with vanilla soy milk and grind themselves into flour while the batter mixes. No bag of flour involved.

The payoff is huge. Freshly ground wheat keeps the bran, germ, and endosperm intact and the natural oils don’t have time to oxidize the way they do in shelf-stable flour. The waffles come out heartier, nuttier, and noticeably more nutritious than anything from a box.

This is also fully vegan: soy milk replaces dairy, applesauce softens the texture, and a little egg substitute provides binding without any actual eggs.

Pro Tips

  • Use a high-powered blender like a Vitamix if you can. Standard blenders struggle to fully grind wheat berries and you’ll end up with grainy waffles.
  • Soak the wheat berries in the soy milk overnight in the fridge if your blender is mid-tier. Soaking softens the grains and makes blending much easier.
  • Cook hot and long enough. The directions call for 6 to 7 minutes on high. Whole grain waffles need that time to fully crisp on the outside.
  • Don’t overfill the iron. Whole wheat batter rises more vigorously than refined flour batter and will overflow easily.

Variations

  • Add a teaspoon of cinnamon or a tablespoon of cocoa powder for flavored waffles.
  • Swap soy milk for oat or almond milk for a different vegan profile.
  • Top with fresh actual berries, maple syrup, and a dollop of vegan yogurt.

Directions

Blend berries and soy milk until smooth.

Mix remaining ingredients, add to blender and combine.

Makes about 3 cups. Make 1 cup sized waffles.

Cook between 6 and 7 minutes on high.

Cooking longer will add cripsness, but can burn.
