Banana nut pops are the kind of healthy snack that almost passes for dessert. Half a banana on a popsicle stick, dipped in apple juice concentrate, rolled in Grape Nuts cereal, then frozen until firm. Three ingredients and absolutely no added sugar, fat, or food coloring.

The apple juice concentrate is the smart swap that makes this work. Plain juice would just slide off the banana, but the concentrate is thick and sticky, so it acts as the glue that holds the cereal in place during the freeze. It also adds an extra hit of natural fruit sweetness that complements the banana.

Grape Nuts cereal is the texture trick. Frozen, the malty wheat-and-barley nuggets stay crunchy and act like a healthier version of nut clusters on chocolate-dipped ice cream pops. Granola works too, but Grape Nuts give a denser crunch that’s more satisfying frozen.

Let the pops thaw for 2 to 3 minutes after pulling from the freezer. Frozen banana straight out of the freezer is too hard to bite into and dulls the flavor; a brief thaw softens just enough that you can enjoy the texture and the cereal coating without breaking a tooth.

Variations

  • Roll in shredded coconut and mini chocolate chips for a tropical version.
  • Use orange juice concentrate or pineapple juice concentrate for different fruit notes.
  • Coat with crushed graham crackers and a sprinkle of cinnamon for s’mores-style banana pops.

Directions

Insert a stick in banana. Dip in juice and roll in cereal. Wrap in plastic wrap and freeze. Thaw a few minutes and eat!
