Impossible Blueberry Pie

Similar to a cobbler - can use any fruit. It's easy to make using Bisquick and some basic pantry ingredients that we always have on hand.

237 ml biscuit baking mix (bisquick)

Directions

Grease an 8" pie plate and put in the blueberries. Sprinkle with lemon juice and vanilla and set a side.

Mix the brown sugar, cinnamon and butter together in a bowl and put over top of blueberries.

In another bowl beat the biscuit mix, sugar and milk together and pour over the blueberry and crumble mix.

Bake in a 350℉ (180℃) oven for 20 to 30 minutes or until it is browned and set.

Serve warm or cold but best served warm from the oven with vanilla ice cream.

I think you can use frozen blueberries. It should work just fine.

I just tried this recipe and it is SO GOOD! So simple to make and bake. Literally my husband and I almost ate the entire thing!

No Egg? The impossible pies I have made before all called for eggs.

Where is the egg for this recipe?

Delicious, but not a pie. Probably the missing egg. Almost a crumble or a cobbler.
To make a more traditional "impossible pie" I would add egg to the crust mix and also mix all ingredients together before adding to greased pie plate.
