40 minThis is paella’s casual American cousin, the kind of dish that rescues a busy Tuesday. A box of Cajun rice mix simmers with canned tomatoes, giving the rice a seasoned backbone before anything else hits the pan. Then cooked turkey or chicken, frozen peas, and shrimp fold in all at once.
The layering matters. Half the rice mixture goes down first, then a full cup of four-cheese blend, then the remaining rice on top. That middle cheese layer melts into a salty, gooey ribbon once the casserole bakes. The top gets its own cup of cheese after the foil comes off, so you end up with molten cheese on top and a hidden pocket running through the middle.
It’s not traditional paella, not even close. But when you need dinner on the table in under 40 minutes and the kids actually eat it, purity goes out the window.

Directions
Cook rice according to package directions using tomatoes.
Remove from heat; sti r in chicken, peas and shrimp.
Spoon half of rice mixture into an 11×7-inch b aking dish; sprinkle with 1 cup 4 Cheese Blend.
Top wi th remaining rice mixture.
Cover with foil; bake at 375℉ (190℃) F 25 minutes or until he ated through.
Uncover; sprinkle with remaining 1 cup cheese.
Let stand 5 minute s or until cheese is melted.
