45 minA genius post-Thanksgiving casserole that turns leftover turkey into something entirely new instead of yet another reheated plate. Two cups of cubed turkey toss with pasta, tomatoes, two cheeses, green onions, and herbs for a one-pan dinner that feeds the whole family again on Black Friday.
The two-cheese combination is what makes this special. Cottage cheese folded throughout the pasta brings creamy moisture and tang from the inside, while shredded cheddar on top melts into the buttery breadcrumb crust for that classic golden-brown casserole finish.
Marjoram is the unexpected herb choice that lifts this from generic to memorable. Less assertive than oregano, marjoram brings a softer floral note that pairs beautifully with both turkey and tomato without overpowering either.
The breadcrumb-and-butter topping is essential. As it bakes, the butter melts into the crumbs and creates a crispy, crunchy crust that contrasts with the creamy pasta underneath, the textural payoff that makes a casserole feel finished.
Kitchen Tips
Slightly undercook the pasta. It continues to cook in the oven, so al dente going in means perfect coming out.
Use leftover turkey breast, dark meat, or a mix. Dark meat adds richer flavor while breast keeps it cleaner.
Use fresh breadcrumbs over dried for a more interesting topping. The irregular fresh crumbs brown into crispy peaks rather than a uniform sandy layer.
Cover with foil for the first 20 minutes if your topping is browning too fast.
