30 minA fast shrimp and saffron rice skillet built for two. Red bell pepper, scallions, and garlic cook in butter first, then the shrimp goes in with seafood seasoning for just a few minutes until opaque. Stir in saffron-tinted rice and a shower of grated Parmesan to finish.
The saffron adds color and a floral, earthy depth that pairs naturally with shrimp. Even a tiny pinch transforms the rice from plain to golden. Turmeric works as a stand-in if saffron isn’t in the pantry, though the flavor will be milder.
This recipe uses pre-cooked rice, so the whole dish comes together in about 10 minutes on the stove. Microwave instructions are included if you want an even faster route.

- Don’t overcook the shrimp. Pull them as soon as they turn opaque and curl into a C shape. Overcooked shrimp go rubbery fast
- Slice the scallion tops and use them too. The green parts add color and a milder onion flavor that works well with the saffron

Add shrimp and seasoning blend; cook, stirring, 3 to 4 minutes.
Stir in rice and cheese; cook and stir until thoroughly heated (about 2 to 3 minutes).
Microwave Oven Instructions =========================== Combine pepper, onions, garlic and butter in 1-quart microproof baking dish .
Cover and cook on HIGH (maximum power) 2 minutes.
Add shrimp and seasoning blend.
Reduce setting to MEDIUM HIGH (70% power); cover and cook 3 to 4 minutes or until shrimp are opaque.
Stir in rice and cheese; cover and cook on MEDIUM HIGH 1 to 2 minutes, or until thoroughly heated.
Let stand 2 minutes.
