In the morning, you simply slide the pan into the oven. No flipping, no fussing at the stove while guests arrive.
An hour later, you’ve got squares of custardy bread with tender apple layers and a crisp, sugary top that cuts cleanly and holds its shape on the plate.
Brunch Tips
- Use day-old French bread for best absorption, cut into 1½-inch thick slices
- Slice apples thin so they soften completely during baking
- Refrigerate overnight for the custard to fully soak into the bread

Slice bread into 1½-inch slices.
Coat a 9-by-13-inch pan with nonstick cooking spray and tightly pack bread into pan.
In a large bowl, stir together eggs, milk, ½ cup sugar and the vanilla.
Pour half of the egg mixture over the bread slices.
Evenly distribute apple slices over bread.
Top with remaining egg mixture.
In a small bowl combine remaining ½ cup sugar, the cinnamon and nutmeg.
Sprinkle over apples.
Dot with butter.
Cover and refrigerate overnight.
The next day, uncover pan and bake in a preheated 350℉ (180℃) F oven for 1 hour.
Remove from oven and let stand for 10 to 15 minutes.
Cut into squares and serve warm.
