This dip is a party trap in the best way. Once it hits the table, conversation drops by half while everyone hovers around the dish trying to look casual about going back for thirds. The combination of warm cream cheese, blue cheese, crisp bacon, and smoked almonds covers every craving in a single bite.

The technique stack matters. Bacon and garlic cook together first, with the garlic going in once the bacon is almost done. That timing is intentional: the garlic gets a quick frizzle in the bacon fat without burning, which it would do over the longer bacon-only cook.

Room-temperature cream cheese is the second non-negotiable. Cold cream cheese refuses to blend smoothly with the half-and-half, and you’ll end up with chunks. Set it on the counter for at least 30 minutes before mixing.

Forty-five minutes covered in the oven brings the whole thing up to bubbling, which mellows the blue cheese’s funky edge and ties all the flavors together. The smoked almonds get sprinkled on after baking so they keep their crunch and smoke flavor.

Pro Tips

  • Use a quality blue cheese, Stilton or Roquefort if you can swing it. Cheap blue is just salty and one-note.

Directions

Chop bacon and cook in skillet until almost crisp.

Drain excess fat from skillet, add minced garlic and cook until bacon is crisp.

Preheat oven to 350℉ (180℃).

Using electric mixer, beat cream cheese until smooth and blend in Half and Half.

Mix bacon mixture with blue cheese and chives.

Put into a 2 cup ovenproof baking dish , cover with foil, and bake about 45 minutes.

Sprinkle with chopped smoked almonds and serve with crackers, bread and/or vegetables.
