5 minThis is the fruit salad that shows up at every church potluck and family reunion in America. Sweetened whipped cream folded with pineapple tidbits, dark sweet cherries, sliced bananas, chopped dates, nuts, and miniature marshmallows. It’s less salad and more dessert, and nobody’s complaining.
Fold the fruit in gently just before serving. The whipped cream is the dressing here, and rough stirring will deflate it and turn the whole thing into a soupy mess. A few careful turns with a spatula are all you need.
The dates add a caramel-like chewiness that contrasts with the soft fruits, and the marshmallows absorb the cream and fruit juices as they sit, becoming pillowy and almost mousse-like. Chopped nuts are the only crunchy element, so don’t skip them.
Timing matters. Assemble this right before serving. Bananas brown, whipped cream weeps, and marshmallows dissolve if it sits too long. Five minutes of prep, straight to the table.

- Drain the canned pineapple and cherries well. Excess syrup thins the whipped cream and makes the salad watery.
