60 minThis vintage one-dish wonder layers browned pork chops over a fruity rice mixture that cooks together into comfort food magic.
Raw rice simmers beneath the chops, soaking up juices and flavors from tart apples, sweet orange segments, and savory onions.
Poultry seasoning (sage, thyme, marjoram) ties everything together with warming herbs.
Fifty minutes covered in the oven and dinner emerges tender, flavorful, and with minimal cleanup required.
Pro Tips
- Brown chops well: That initial sear adds flavor and helps chops stay moist during baking
- Use regular rice: Instant rice turns mushy; long-grain white rice needs the full bake time
- Cover tightly: Foil or a tight lid traps steam so rice cooks evenly
- Let it rest: Five minutes after baking lets rice finish absorbing liquid
Variations
- Add dried cranberries or apricots to the rice for extra fruit sweetness
- Use chicken thighs instead of pork chops for different protein
- Swap poultry seasoning for Italian herbs (oregano, basil) for Mediterranean twist
Ingredients
Directions
Trim excess fat from pork chops; season lightly with salt and pepper.
Brown quickly in shortening.

Combine all remaining ingredients except pork chops with the onion; mix well, then pour into a greased 2 qt. shallow casserole dish.
Arrange chops on this mixture.
