45 minFreezer tacos are what meal-prep looked like before meal-prep was a hashtag. You make a batch of beef-tomato mix on a slow Sunday, freeze it in portions, and come Tuesday night dinner goes from rock-solid block to sizzling taco filling in about half an hour.
The mix starts frozen, dropped whole into a saucepan with chili powder, cayenne, hot sauce, and a splash of water. Cover and simmer 15 minutes to thaw, then uncover another 15 so the sauce reduces and the spices bloom.
The frequent stirring is key, blocks of frozen mix refuse to cook evenly without help breaking up the chunks.
While the filling simmers, heat crunchy taco shells per the package (usually 5 minutes in a 350°F / 175°C oven is all they need to crisp). Set up a build-your-own bar with shredded cheddar, lettuce, and fresh tomato, plus taco sauce for the ones who want it saucier.
Kitchen Tips
- Dip the frozen container briefly in hot water to release the block cleanly into the pan
- Stir often while the mix thaws, chunks cook unevenly and can scorch on the pan bottom
- Warm the shells upright on a baking sheet so they don’t collapse during heating
- Set toppings out in small bowls, family-style, so everyone builds their own
Variations
- Swap hard shells for soft tortillas for handheld tacos

Ingredients
Directions
Dip container of frozen mix into hot water just to loosen.
In 2-quart saucepan, heat frozen mix and remaining ingredients to boiling.
Reduce heat; cover and simmer, stirring frequently, until mix is partially thawed, about 15 minutes.
Uncover and simmer 15 minutes, stirring occasionally.
While Meat Filling is simmering, heat taco shells as directed on package.
Spoon Meat Filling into taco shells.
Top filling with cheese, lettuce and tomato.
If desired, serve with taco sauce.
