Four cheeses, ground beef, and stewed tomatoes tossed with penne for a loaded weeknight dinner that takes about 30 minutes start to finish.

The sauce builds right in the skillet. After browning the beef, stewed tomatoes cook down until slightly thickened, then cream cheese gets stirred in while everything is still hot. It melts into the tomato-beef mixture and creates a creamy base that the shredded Swiss, cheddar, and Parmesan cling to. Covering the skillet for just two minutes at the end gives those shredded cheeses enough residual heat to go fully molten.

Scallions stirred in with the cream cheese add a fresh, mild bite that cuts through all that richness. Don’t skip them.

Pro Tips

  • Brown the beef thoroughly before adding tomatoes. You want real color on the meat, not gray and steamed. That browning builds flavor the cheese sauce rides on.
  • Cut the cream cheese into small cubes before adding it. Large blocks take forever to melt and leave lumpy pockets in the sauce.

Directions
