These are old-school stovetop candies that taste like butterscotch got tangled up with dried figs and nuts. Brown sugar melts into butter in a heavy pan, the figs and ground nuts get stirred in, and everything gets dropped onto wax paper to set. That’s the whole recipe.

The brown sugar and butter create a true butterscotch base when cooked together until the sugar fully dissolves. Don’t rush this step. If the sugar is still grainy when you add the figs, the candies will have a gritty texture instead of that smooth, caramelly chew.

Ground figs give these drops a jammy sweetness and a slightly sticky texture that holds each piece together. Combined with the crunch from the nuts, every bite has something going on.

Pro Tips

  • Use a heavy-bottomed pan. Thin pans create hot spots that scorch the sugar before it dissolves evenly.
  • Stir constantly while the sugar cooks. Brown sugar burns fast once it’s melted, and there’s no saving a burnt batch.
  • Work quickly once you pull the pan off the heat. The mixture stiffens as it cools, and you want neat drops, not a clump stuck in the pan.
  • If the mixture hardens before you finish dropping, return it to low heat for a moment to soften.

Variations

  • Rum butterscotch: Add a splash of dark rum with the vanilla for a boozier, more complex candy.
  • Coconut fig drops: Fold in shredded coconut along with the figs for extra chew and tropical flavor.

Directions

Melt butter in heavy frying pan.

Stir in brown sugar and cook until sugar is dissolved.

Blend well. Add ground figs and nut meats and remove from fire.

Add flavoring and drop by spoonfuls onto waxed paper.
