Fat-free three bean salad shakes together steamed green beans, chickpeas, kidney beans, and red onion in rice vinegar. No oil, no sugar, just five ingredients and a fridge.

8 hrsFat-free three bean salad strips the classic picnic salad down to five clean ingredients and skips the oil entirely. The rice vinegar does all the work, both flavoring the beans and pickling them lightly during the overnight rest.
The trick is the overnight chill. The beans soak up the vinegar slowly, picking up acidity and tang while the red onion softens its raw edge into something sweeter and more mellow. Fresh from the bowl this salad is sharp, but after 24 hours it transforms.
The salad genuinely gets better over time, peaking around day three and holding well for up to 10 days in the fridge. This is the rare make-ahead dish where waiting is actively better.
Steam the fresh green beans until just tender, around 5 minutes, and shock in ice water to lock in the bright green color. Limp gray green beans will torpedo the salad before it even starts.
Canned chickpeas and kidney beans go in drained but not rinsed if you want the natural salt to help season, rinsed if you prefer to control sodium yourself.
Serve at picnics, alongside grilled meats, or as a light lunch over a bed of lettuce.
Kitchen Tips
- Shake the container daily to keep the vinegar evenly distributed across all the beans.
- Use rice vinegar as specified, it has the mildest acidity, white vinegar is too sharp for the no-oil format.
- Add a teaspoon of dried Italian herbs or fresh chopped parsley for color and depth.
- A pinch of black pepper and a clove of crushed garlic adds savor without adding fat.
