This isn’t your grandmother’s rice pudding. Dates do all the sweetening here, blended smooth with milk, tahini, and vanilla into a luscious sauce that coats every grain of brown rice.

Arrowroot flour thickens it without any eggs, making this a lighter, plant-forward take on the classic comfort dessert.

Directions

Cook rice in water and salt (if used) for 12 minutes.

Blend remaining ingredients together in a blender, pour into a sauce pan and stir over medium-low heat until thick.

Stir in rice, and let set 5 minutes before serving.

Sprinkle with cinnamon if desired.
