30 minThis isn’t your grandmother’s rice pudding. Dates do all the sweetening here, blended smooth with milk, tahini, and vanilla into a luscious sauce that coats every grain of brown rice.
Arrowroot flour thickens it without any eggs, making this a lighter, plant-forward take on the classic comfort dessert.
A dusting of cinnamon on top brings it all together.
Ready in about 30 minutes, it’s just as satisfying warm off the stove as it is chilled from the fridge.
Kitchen Tips
- Use quick-cooking brown rice to keep the total time under 30 minutes
- Blend the date mixture thoroughly for the smoothest, creamiest pudding
- Serve warm for a cozy treat or chill it for a make-ahead dessert that thickens as it cools
