30 minThese old-fashioned date filled cookies are the kind you’d find in your grandmother’s cookie jar: soft oatmeal rounds pressed together with a luscious homemade date filling.
The cookie dough is simple. Brown sugar, oatmeal, and just enough flour to hold it all together.
The filling cooks down into a thick, jammy paste of dates, brown sugar, and a squeeze of lemon juice that keeps it from being cloyingly sweet.
Chill the dough before rolling for the cleanest cuts and prettiest cookies.

- Chill the dough at least 30 minutes for easier rolling and cutting
- Cook the date filling until it’s thick enough to mound on a spoon; too thin and it’ll ooze out

Ingredients
Directions
Cream shortening and sugar.
Add milk and then oatmeal.
Add dry ingredients and mix well.
Dough should be soft.
Chill. Roll out and cut with cookie cutter.
Bake in 375 oven until browned about 12 min.
When cool put to-gether with date filling.
Cook until thick and cool before using.
