These old-fashioned date filled cookies are the kind you’d find in your grandmother’s cookie jar: soft oatmeal rounds pressed together with a luscious homemade date filling.

The cookie dough is simple. Brown sugar, oatmeal, and just enough flour to hold it all together.

The filling cooks down into a thick, jammy paste of dates, brown sugar, and a squeeze of lemon juice that keeps it from being cloyingly sweet.

Chill the dough before rolling for the cleanest cuts and prettiest cookies.

Kitchen Tips

  • Chill the dough at least 30 minutes for easier rolling and cutting
  • Cook the date filling until it’s thick enough to mound on a spoon; too thin and it’ll ooze out
  • A splash of lemon juice in the filling brightens the sweetness and balances the rich dates
