Date Chewsticks

Ingredients

3 large eggs
1 teaspoon vanilla extract
1 teaspoon baking powder
1 cup sugar
1 cup dates
1 cup flour, all-purpose

Directions

Beat eggs and sugar, add baking powder, vanilla, and flour. Add the dates last and mix thoroughly. Batter will be thick. Pour into a greased 8x8 pan and bake at 350 for 25 to 30 minutes. When cooled sprinkle icing sugar over the top and rub in until completely coated with icing sugar.

Note: Can be doubled and baked in a 9x13 pan. Takes about 10-15 minutes longer.

Or use candied fruit that is available at Xmas in place of the dates.

To make it real fancy, use a paper doily before sprinkling the icing sugar on top.

Thank you! Date chewsticks were a big hit with my family. They are light yet dense and delicious. One adjustment I had to make, however, was the baking time. After 30 minutes, much of the center was still uncooked. I cut them into small pieces and baked them 15 more minutes on a baking sheet. I think this might have worked better if baked from the start spread out on a sheet.

Debbie's White Chocolate Cheesecake

The best for holiday dinners! You can delete the chocolate shavings and add a blueberry topping (fresh blueberries with suregel & sugar) and a dolup of whip cream. Everybody loves it! It's worht the calories.
