50 minThese squares land somewhere between a blondie and a fruit bar. The batter is straightforward (butter, sugar, egg, flour), but the chopped apples and dates do all the heavy character work. The apples release moisture as they bake, keeping the interior soft, while the dates add pockets of sticky, caramel-like sweetness.
The dough is thick and chunky, more fruit and nuts than batter. Spread it into the pan and don’t worry about perfection. The uneven surface bakes into a mix of chewy centers and slightly crisp edges.
Thirty minutes in the oven and you’re cutting squares. That’s it.
Kitchen Tips
- Chop the apples fine so they break down during baking. Large chunks stay too firm and make the squares hard to cut cleanly.
- Medjool dates work best here. They’re softer and sweeter than drier varieties, and they melt into the batter more naturally.
- Let the squares cool completely in the pan before cutting. Warm, they crumble apart. Cooled, they hold together and slice neatly.
Variations
- Toss in a handful of rolled oats for a chewier, more rustic texture.
- Add a pinch of cinnamon and nutmeg to the flour mixture for warm autumn spice.
- Use dried figs or dried apricots in place of dates for a different fruit sweetness.
