This is a high-fiber bread machine loaf engineered for healthy eating without sacrificing texture. The grain blend is the star: whole wheat flour and bran do the bulk work, rolled oats add chew, and wheat germ packs in nutritional density. A few tablespoons of vital wheat gluten flour boost the protein and give the dough enough elasticity to rise properly, which whole grain breads otherwise struggle with.

Two tricks keep this loaf moist without added fat. Unsweetened applesauce replaces the butter or oil most bread machine loaves call for, while egg whites (no yolks) give the bread the binding and softness of eggs without the cholesterol. Optional raisins drop in for natural sweetness if you want them. Slice it thick for hearty sandwiches, toast for breakfast with peanut butter, or eat it warm out of the machine with a smear of butter.

Kitchen Tips

  • Use the whole-wheat cycle if your machine has one. The longer kneading and rising time develops gluten in heavy grain doughs that the standard cycle does not.
  • Add the wet ingredients first, then the dry, then the yeast on top. The layering keeps the yeast away from salt until mixing starts.
  • Do not skip the gluten flour or substitute regular flour. Whole grain dough needs the extra protein to rise properly. Use vital wheat gluten if you have it.
  • If the dough looks too dry during the first knead, add water a little at a time. Whole grain flours vary in how much liquid they absorb.
  • Brush the warm loaf with a thin film of olive oil for extra shine and a slightly softer crust.

Variations

  • Stir in a touch of honey if the applesauce is not sweet enough on its own.
  • Add sunflower seeds, flax seeds, or chopped nuts for crunch and healthy fats.
  • Replace the raisins with chopped dried apricots or cranberries for a different fruit profile.
