Old-fashioned currant jelly uses just two ingredients: fresh currants and sugar. Traditional cook-and-strain method without commercial pectin. Bright tart-sweet jelly for toast, lamb, or thumbprint cookies.

Currant jelly is one of those rare preserves that doesn’t need any added pectin. Currants are naturally so high in pectin that the juice gels firmly with just sugar and a brisk boil. Three pounds of berries plus sugar at ¾ cup per cup of strained juice is the entire recipe. No specialty equipment, no boxed pectin, no fuss.

The “sheets from a spoon” test is the traditional doneness check from the days before candy thermometers were standard kitchen kit. Dip a cool metal spoon into the boiling jelly and tilt it. If two streams of jelly run together and fall as a single sheet rather than separate drops, the jelly will set when cool. Anything earlier and it stays syrupy.

A jelly bag is what separates clear jelly from cloudy. The fine cloth strains out skins, seeds, and pulp without squeezing them through. Resist the urge to press the bag to speed things up. Pressed jelly turns cloudy and you lose the gem-like clarity that defines a good currant jelly.

Kitchen Tips

  • Use red, white, or black currants. Black currants make a darker, more intense jelly. Red is the classic.
  • Don’t strip the stems. The stems contribute pectin and tannin and they all get strained out anyway.
  • Sterilize jars and lids in boiling water for 10 minutes before filling. Hot jelly into hot jars prevents cracking.
  • For long-term storage, process sealed jars in a boiling water bath for 5 minutes. For short-term use, refrigerate up to 3 weeks.

Variations

  • Pair with lamb or game as a classic British accompaniment. The tart sweetness cuts through rich red meat beautifully.
  • Spoon a teaspoon into Linzer cookies or Austrian thumbprints for traditional pastry use.
  • Stir into pan sauces for duck, pork, or venison along with a splash of red wine for a quick gastrique-style sauce.

Directions

Wash and stem currants. Cover with water. Cook slowly until tender.

Drain through jelly bag.

Use ¾ cup sugar for each cup juice. Boil rapidly until jelly sheets from spoon.
