The chill-until-thickened-but-not-firm step is the one most people skip, and it’s the difference between a silky creamy salad and a layered mess. You want the gelatin at soft-set, like raw egg whites, before folding in the sour cream so everything stays evenly suspended rather than sinking or floating.

Crushing the cranberry sauce with a fork instead of stirring it smooth keeps little ruby pockets of whole berries in every bite. That textural contrast is what makes this salad more interesting than a simple pink mold.

Directions

Dissolve gelatin in hot water and chill until thickened, but not firm.

Break cranberry sauce into small pieces with fork.

Add to gelatin with celery and nuts.

Fold in sour cream and chill until firm.
