1 hrsThis is a bread-machine loaf that punches above its weight. Cracked wheat cereal and sunflower seeds turn an everyday white loaf into something with character, nutrition, and crackling, nutty texture. Sliced thick for sandwiches or toast, it has the feel of an artisan bakery loaf with none of the effort.
The cracked wheat is the key ingredient. Unlike whole-wheat flour, cracked wheat cereal contains broken kernels of whole grain that don’t dissolve into the dough. They retain texture through the bake, giving the bread its signature speckle and bite. Soak nothing; the dough hydrates the grain during the rise.
Honey does more than sweeten. The natural sugars feed the yeast for a livelier rise, and the small acid content tenderizes the gluten for a finer crumb. Don’t substitute granulated sugar; the texture suffers noticeably.
Use unsalted sunflower seeds, not the snacking variety. Salted seeds throw off the salt balance and make the bread too aggressive. Raw or lightly toasted are both fine; toasted adds deeper nutty flavor.
The yeast goes into the yeast holder, not the main pan. This keeps the yeast dry and separated from salt (which kills active yeast on contact) until the machine starts the mixing cycle. Skipping this puts the entire loaf at risk.
Pro Tips
- Run the machine on basic or white bread cycle, not whole wheat; the bread flour does the work.
- If the dough looks dry during the first knead, add water a teaspoon at a time.
- Cool on a wire rack at least 30 minutes before slicing for clean cuts.
- Toast a slice and top with sharp cheddar for the ideal pairing.
Variations
- Add a tablespoon of molasses for darker, sweeter bread.
- Stir in 2 tablespoons of flax seeds or sesame seeds for more crunch.
- Use whole wheat flour for half the bread flour for a darker, denser loaf.
