Think of this as a shepherd’s pie that ran off with an apple orchard.

Layers of savory chopped ham mingle with tart green apples and onions, all seasoned with earthy sage and moistened with bouillon.

A thick blanket of mashed potatoes goes on top, brushed with melted butter so those peaks crisp and brown into little golden crowns.

Baked low and slow, the apples soften into the ham, creating pockets of sweet-savory magic in every forkful.

Kitchen Tips

  • Use firm, tart apples like Granny Smith. They hold their shape during the long bake and give you that sharp contrast against the salty ham.
  • Chop the ham finely so it meshes with the apple layers rather than sitting in big chunks.
  • Whip the mashed potatoes a touch thinner than usual so they spread easily over the casserole without dragging the layers underneath.
