30 minThese cupcakes sit somewhere between a muffin and a dessert. There’s only a quarter cup of sugar in the whole batch, which makes them lightly sweet rather than the full-sugar treat you’d find at a bakery. What carries the flavor instead is unsweetened applesauce and a surprisingly generous hand with the nutmeg: one and a half teaspoons, which is more than most recipes dare.
That nutmeg is the defining note. It’s warm and slightly musky in a way that reads as autumn in every bite. The cinnamon provides the familiar spice backbone. Chopped walnuts add crunch and a little richness without overwhelming the delicate, tender crumb.
The alternating method, dry ingredients in with the applesauce in stages rather than all at once, keeps the crumb even and prevents the batter from over-developing. These bake in 15-20 minutes and work just as well as a snack straight from the tin as they do with a swipe of cream cheese frosting when you want to push them toward dessert territory.
Kitchen Tips
- Cream the margarine until genuinely fluffy before adding the eggs and sugar. That air incorporation is what gives these their light texture.
- Alternate the dry and wet ingredients in two or three additions each, mixing gently after each. This is the technique that keeps the crumb tender.
- Check at 15 minutes. These are small cupcakes and overbaking dries them out quickly.
- For a simple frosting, beat cream cheese with powdered sugar and a splash of vanilla until smooth.
Variations
- Add raisins: Fold in ¼ cup of raisins with the walnuts for extra sweetness and chew.
- Cloves addition: Add a pinch of ground cloves alongside the cinnamon and nutmeg for a more complex warm spice blend.
