Applesauce yeast bread brings real apple flavor through three different routes: warm applesauce for moisture, warm apple juice in place of plain water, and freshly grated apple folded into the dough. That triple-apple approach is what separates this loaf from a cinnamon bread that just smells like fall.

Using warm liquid is the single most important technique here. Cold applesauce or juice straight from the fridge will shock the yeast and stunt the rise. Aim for around 110°F (43°C), which feels like warm bath water on the wrist.

Cinnamon and nutmeg are kept light on purpose so they back up the apple rather than overpower it. The bread flour and whole wheat blend delivers structure with a hint of nutty depth, and the resulting crumb is soft enough for sandwiches but sturdy enough for toast.

Pro Tips

  • Bring all ingredients to room temperature before starting, especially the egg and butter. Cold spots in the dough lead to uneven rising.
  • Grate the apple on the large holes of a box grater and squeeze out excess moisture in a towel. Wet apple shreds make the loaf gummy.
  • If shaping into two small loaves manually, knock the dough back gently after the first rise. Aggressive deflating tears the gluten structure.
  • Cool completely on a rack before slicing. Yeast breads steam from the inside; slicing warm produces a gummy crumb every time.

Variations

  • Add ½ cup raisins or chopped dried apple along with the grated fresh apple for chewy fruit pockets throughout.
  • Swap the apple juice for apple cider for a deeper, more pronounced fruit flavor.
  • Replace half the bread flour with white whole wheat flour for a heartier whole-grain version that stays soft.

Directions

Use ingredients at room temp Put all ingredients in the order listed into pan, select white bread, and push “start".

This can be mixed on manual of the bread machine. After Second kneading, remove dough for machine, divide into to equal portions and place in small loaf pans. Cover and let rise to double, about 45 min to 1 hour.

Bake at 350 f. for 35 to 40 min.
