This wheat germ applesauce cake is what you bake when you want something sweet that’s actually good for you.

Wheat germ (or substitute bran or whole wheat flour) adds nutty flavor and fiber, while applesauce keeps everything moist with barely any oil.

Orange juice and zest brighten it up, and raisins add natural sweetness for a cake that’s diabetic-friendly and low-fat.

Pro Tips

  • Substitute bran or whole wheat flour if you don’t have wheat germ on hand
  • Stir the wet and dry ingredients just until moistened; overmixing makes the cake tough
  • Cut into 2×2-inch bars for perfect portion control and easy packing in lunchboxes
