Tender sliced pears baked beneath a rich cocoa batter with dark brown sugar and golden syrup. This British-style chocolate pear pudding serves 8 and comes together in about an hour.

60 minThere’s something undeniably cozy about a proper baked pudding, and this one pairs ripe pears with a cocoa-laced sponge that puffs up golden and gorgeous in the oven.
Sliced pears nestle into the bottom of a buttered dish, get dotted with butter and sugar, then disappear under a simple chocolate batter enriched with dark brown sugar and golden corn syrup.
As it bakes, the pears soften into jammy sweetness while the sponge develops a slight crust on top with a moist, almost fudgy center.
Serve it warm with a generous scoop of vanilla ice cream or a cloud of whipped cream. This is comfort food at its finest.
Chef Tips
- Use ripe but firm pears like Bartlett or Bosc so they hold their shape during baking
- Slice pears thin for a more integrated texture, or chunk them for distinct bites of fruit

Peel, core and slice thin (or cut into chunks) 1 pound of pears, which you arrange on the bottom of a buttered baking dish ( a souffle dish is fine).
Sprinkle the pears with sugar, and dot with butter.
Then mix together the flour, the cocoa powder, the baking soda and powder, add the golden corn syrup, the brown sugar, and then the egg, the butter and milk.
Beat together into a batter.
Pour the batter on top of the pears and bake the pudding for 45 to 50 minutes in a 325 degree F oven.
It is nice topped with either ice or whipped cream.
