Apple mash is an Irish classic that sounds odd until you taste it, then suddenly it makes perfect sense.

Boiled potatoes get mashed smooth, then beaten together with apples that have been cooked down with a touch of sugar until they’re soft and sweet.

A generous knob of butter brings it all together into something creamy, comforting, and completely addictive.

  • Cook the apples with just a tablespoon of water to keep them from burning while they soften
  • Mash the potatoes thoroughly before adding the apples so you don’t get lumps

Directions

Peel potatoes. Cook in salted, boiling water. Meanwhile peel, core, and slice apples. Place in a pot with a tablespoon of water, and the sugar. Cook until soft. When the potatoes are cooked, drain and mash thoroughly. Beat in the apples and butter. This mash goes particularly well with bacon, or fried herring.
