45 minThese aren’t delicate cookies; they’re hearty, chewy rounds packed with enough good stuff to almost qualify as breakfast.
Fresh Granny Smith apple pieces, plump raisins, and crunchy walnuts stud every bite, while honey and brown sugar keep the texture soft and the flavor deep.
The trick is pulling them from the oven when barely golden so they stay tender in the center.
Pro Tips
- Dice the apple into small, even pieces so it bakes evenly and doesn’t create soggy spots
- Don’t overbake; these cookies firm up as they cool on the baking sheet
- Space dough 3 inches apart since these spread considerably in the oven
- Store in an airtight container and they’ll stay moist for nearly a week thanks to the apple and honey
Ingredients
Directions
Heat oven to 375℉ (190℃). Grease baking sheets. Place sheets of foil on counter top for cooling cookies.
Combine shortening, brown sugar, egg, milk, honey and vanilla in large bowl. Beat with electric mixer at medium speed until well-blended. Combine oats, flour, baking soda, salt and cinnamon. Mix into creamed mixture at low speed just until blended. Stir in raisins, walnuts and apples.
Drop rounded measuring tablespoonfuls of dough 3 inches apart onto baking sheet.
Bake one baking sheet at a time at 375℉ (190℃) 10 to 12 minutes, or until lightly browned. DO NOT OVERBAKE. Cool 2 minutes on baking sheet. Remove cookies to foil to cool completely.
Makes 3 dozen cookies.
