Four ingredients and zero baking turn into an impressive frozen dessert. A buttery chocolate wafer crumb crust gets pressed into the pan and frozen firm, then layered with softened peppermint ice cream and sealed under a blanket of chocolate fudge topping. Freeze it overnight and you’ve got clean, sliceable squares of chocolate-peppermint heaven.

The key is freezing the crust before adding the ice cream. A frozen base stays crisp and distinct instead of getting soggy from the moisture in the ice cream. And letting the finished dessert sit at room temperature for 15 minutes before cutting means your knife slides through cleanly instead of shattering the layers.

Chef Tips

  • Soften the ice cream just enough to spread easily but not so much that it’s melting. Leave it on the counter for 5 to 10 minutes before scooping.
  • Press the crumb mixture firmly and evenly across the bottom and partway up the sides. Loose crumbs crumble when you cut the squares.
  • Warm your fudge topping slightly so it pours and spreads smoothly over the ice cream without dragging.
  • Wrap the pan tightly with plastic wrap before the overnight freeze to prevent freezer burn and off-flavors.

Directions

Combine crumbs and butter.

Press mixture onto bottom and part way up sides of 8 inch square baking pan.

Freeze until firm. Spread ice cream over the frozen crumbs.

Cover with chocolate topping. Freeze several hours or overnight.

To serve, let stand at room temperature about 15 minutes; cut into squares.
