This chicken salad is a whole mood: bright, fruity, and crunchy all at once.

Cubed chicken (or turkey, your call) gets folded into a lime-spiked mayonnaise with a whisper of nutmeg, then loaded up with mandarin orange segments, halved green grapes, crisp celery, and toasted almonds.

Served chilled on lettuce leaves, it’s the kind of elegant lunch that comes together in about 15 minutes with zero cooking involved.

Bring this to a brunch or ladies’ luncheon and watch it vanish.

Chef Tips

  • Pat the mandarin oranges dry after draining so they don’t water down the dressing
  • Toast the almonds until just golden for the best crunch and flavor
  • Swap in pecans or cashews if almonds aren’t your thing
  • This keeps well in the fridge for a day, but hold the almonds until serving so they stay crispy
