Pork Chops in White Wine

Ingredients

4 each pork chops lean, about 1 inch (2.5 cm) thick
1 x salt to taste
1 x black pepper to taste
1 teaspoon bacon drippings or olive oil
2 teaspoons flour, all-purpose
1/2 cup chicken broth
1/2 cup wine dry, white
1 each onion sliced
1 x rice cooked, hot

Directions

Season chops with salt and pepper. Sear slowly on both sides in hot bacon fat. Remove from skillet. Stirring constantly, blend flour into fat remaining in skillet. Add broth and wine. When very smooth, return chops to skillet. Spread onion over chops. Cover skillet; simmer about 45 minutes. Serve with rice.

Makes 4 servings.
