Some pies belong on the casserole-of-the-week shelf, and this is one of them. Five ingredients, no oven, no electric mixer required, and dessert is on the table by the time the dishes are stacked. Chocolate instant pudding mix does the structural work, peanut butter gives it body and flavor, and a tub of whipped topping crowns the whole thing.

The trick to keeping it lump-free is mixing in the right order. Whisk the milk and peanut butter together first until smooth. Cold milk poured straight into peanut butter clumps into hard little pearls; whisking them together gradually thins the peanut butter into something that integrates evenly. Once that’s smooth, dump in the pudding mix and stir for two minutes. The pudding starts setting on contact, so move quickly into the shell.

A graham cracker crust is the standard, but a chocolate cookie crumb crust pushes the chocolate-peanut profile harder and looks more polished on a plate.

Pro Tips

  • Use whole milk for the silkiest, thickest texture. Skim milk leaves the pie watery and unstable.
  • Stir the peanut butter jar well before measuring if using natural-style. Oil separation throws off the consistency.
  • Pour into the shell within a minute or two of mixing. Instant pudding sets fast and stiff filling won’t smooth out neatly.
  • Chill at least 2 hours, ideally 4, before slicing. The pie firms as it cools.
  • Add the whipped topping just before serving so it stays cloud-like, not weeping into the filling.

  • Use vanilla instant pudding instead of chocolate for a paler, more peanut-forward pie.
  • Stir 2 ounces melted bittersweet chocolate into the pudding base for a darker, fudgier filling.
