Peanut Butter Chocolate Cream Pie

Ingredients

1/3 cup peanut butter
3/4 cup powdered sugar
1 each pie shell (9 inch) baked
3/4 cup sugar granulated
3 tablespoons cornstarch
1/4 teaspoon salt
2 cups milk
1 1/2 squares chocolate unsweetened in pieces
3 each egg yolks slightly beaten
1 teaspoon vanilla extract
1 x whipped cream

Directions

Combine the peanut butter and confectioner's sugar.

Sprinkle 2/3 of the mixture in the pie crust.

In a saucepan, combine the granulated sugar, cornstarch, and salt.

Stir in the milk and the chocolate pieces.

Bring mixture to a boil; cook and stir one minute.

Add at least half of the mixture to the beaten egg yolks; return to pan.

Cook and stir one minute.

Add the vanilla. Pour mixture into crust.

Cover with plastic wrap and chill.

Before serving, spread whipped cream over the pie filling and sprinkle the remaining peanut butter mix.

Salmon with Asparagus Sauce

YUM!! Tweeked the recipe a bit....when simmering the cream and aspargus also added minced shallot and a few red chili flakes.
