Breaded chicken pieces cooked in the microwave with sauterne wine, mushrooms, and tomatoes. A quick shortcut version of the classic French Chicken Marengo.

30 minChicken Marengo has roots in Napoleonic legend, but this version swaps the battlefield drama for microwave convenience.
Chicken pieces get coated in seasoned bread crumbs, then cook in just 15 minutes with sauterne wine, sliced mushrooms, and whole peeled tomatoes. The bread crumb coating holds up surprisingly well in the microwave, and the wine and tomato juices create a light, rustic sauce.
It’s not going to win any French cooking awards, but for a weeknight dinner that nods to the classic while getting food on the table in half an hour, it gets the job done.
Kitchen Tips
- Arrange chicken with the thickest portions facing the outside of the dish. Microwaves cook from the outside in, so this ensures even cooking.
- Cover loosely with plastic wrap, not tight. Steam needs somewhere to escape or you’ll get rubbery chicken.
- Let it rest for 2 to 3 minutes after microwaving. Carryover heat finishes the cooking and the juices redistribute.

Directions
Combine seasoned salt, spaghetti sauce mix and bread crumbs in a plastic bag. Shake chicken pieces in bread crumb mixture.
Arrange coated chicken pieces in a shallow, 2-quart, heat- resistant, non-metallic casserole with the thickest portions toward outside of casserole. Heat, covered loosely with a paper towel, in Microwave Oven 6 minutes.
Add wine, mushrooms, remaining crumb mixture, and cut up tomatoes with liquid.
Cover loosely wvith plastic wrap and heat 9 minutes in Micro- wave oven or until chicken is tender.
