This chicken salad packs in shredded cheddar, crunchy celery, green bell pepper, scallions, and a pop of color from pimiento. The dressing is half mayonnaise, half yogurt, so you get that creamy richness without feeling like you need a nap afterward.

Mix it up, stash it in the fridge, and you’ve got sandwich filling for the whole week. Pile it high on soft rolls with crisp lettuce, or scoop it onto crackers for a quick snack.

Kitchen Tips

  • Use leftover rotisserie chicken for the fastest possible version. Shred it by hand for better texture than chopping.

Directions

Combine chicken, cheese, celery, bell pepper, onion, pimiento, mayonnaise and yogurt.

Season with salt and pepper. Stir until well blended.

Refrigerate until ready to use.
