Impossible Brownie Pie

Ingredients

4 large eggs
1/2 cup brown sugar packed
1/4 cup margarine or butter,
1/2 cup biscuit baking mix (bisquick)
4 ounces chocolate melted and cooled
1/2 cup sugar granulated
3/4 cup nuts chopped

Directions

Preheat oven to 350 degrees F.

Grease 9 inch pie plate.

Beat eggs, margarine and chocolate till smooth, 10 seconds in blender on high or 30 seconds with hand beater.

Add brown sugar, Bisquick and granulated sugar.

Beat till smooth, 1 minute in blender on high (stopping occasionally to scrape down sides) or 2 minutes with hand beater.

Pour into plate; sprinkle with nuts.

Bake till knife inserted in centre comes out clean; about 35 minutes.

Cool.

Apple and Cranberry Muffins

Turned out very good. I was worried how they would turn out considering that there was absolutely no butter or oil in the recipe at all! They didn't rise as much as more traditional recipes but turned out great with a lovely rustic home-made appearance. Not too sweet, lots of chunks of apple and cranberries, bursts of sweet vs. sour. The texture was slightly like a sponge cake. I would recommend filling the muffin cup from 2/3 up to full.
