Huckleberries are the wild cousin of blueberries, sharper and more floral, and they shine in a double-crust pie where the heat coaxes out their perfumed sweetness. This is a recipe Northwest foragers have been making for generations.

The grated apple is the smart move. As it bakes, the apple breaks down, releasing pectin that thickens the huckleberry juice into a glossy, spoonable filling. No cornstarch slurry, no tapioca pearls, just fruit doing the work.

A half teaspoon of almond extract is the second trick. Almond and stone-fruit relatives share aromatic compounds with berries, so a small dose amplifies the huckleberry flavor instead of competing with it. Don’t skip it and don’t overdo it.

A single bowl gets you to the pie shell. Mix berries, grated apple, sugar, flour, almond, and salt. Pour into the bottom crust, top, seal, slash the top to vent steam, and bake until the juice bubbles thick through the slits.

Directions

Measure ingredients into a two quart mixing bowl and mix well.

Pour into unbaked pie shell.

Cover with top crust and bake at 375℉ (190℃). for about one hour or until nicely browned.
