This isn’t your standard double-crust apple pie. Chopped apples get folded into a batter of brown sugar, flour, and pecans that bakes up into a crispy, crumbly topping. The separated egg white, beaten foamy and folded in at the end, is what gives this pie its signature crunch as it bakes.

The lemon juice does more than add flavor. It keeps the apples from browning and adds a tart edge that balances the double dose of sugar. Using both brown and white sugar means you get caramel depth from the brown sugar while the white sugar helps the top crisp.

Because the apples are chopped rather than sliced, every bite has a different ratio of fruit to crunchy pecan batter. Some forkfuls are apple-heavy, some are mostly that golden crust. That unpredictability is what makes it fun.

Pro Tips

  • Beat the egg white until just foamy, not stiff peaks; you want air in the batter, not a meringue
  • Use firm, tart apples like Granny Smith so they hold their shape and don’t turn to mush
  • Check at 30 minutes; the top should be deeply golden brown with tender apples underneath
  • Let the pie cool at least 20 minutes before slicing so the filling sets slightly

Variations

  • Add a teaspoon of cinnamon to the batter for a classic autumn spice note
  • Swap pecans for walnuts or use a mix of both for varied crunch
  • Drizzle warm slices with caramel sauce and a scoop of vanilla ice cream
