Watermelon-flavored Jello gets dissolved, quick-chilled with ice cubes, and folded into whipped topping for a mousse-like filling that’s light as a cloud.
Into a graham cracker crust it goes, then straight to the fridge for 4 hours until it sets firm enough to slice.
The beauty of this recipe is its flexibility. Use any Jello flavor you like, or swap in sugar-free gelatin and light whipped topping for a guilt-free version that still delivers on fun.
Pro Tips
- Remove any unmelted ice cubes before folding in the whipped topping or you’ll get watery pockets in the filling
- The mixture should mound on a spoon before you pour it into the crust. If it’s too runny, give it another 5 minutes in the fridge
- Top with extra whipped topping and a few mini chocolate chips to mimic watermelon seeds for a fun presentation

Directions
Stir boiling water into gelatin in bowl 2 minutes or until. Mix cold water and ice to make 1¼ cups. Stir into gelatin until slightly thickened. Remove any remaining ice.
Stir in whipped topping until smooth. Refrigerate 10 minutes or until mixture will mound. Spoon into crust.
Refrigerate 4 hours or until firm. Garnish with additional whipped topping, if desired.
NOTE: Sugar-Free jell-o and light cool whip can be substituted.
