Chess pie is one of the most underappreciated American desserts. Born of Southern thrift, it’s a custard pie that uses pantry staples (sugar, eggs, butter, milk) to create something between a custard and a chocolate fudge pie. This version swaps cocoa powder into the classic formula for a deep chocolate flavor.

The baking method creates the signature chess pie texture. As it bakes, the surface dries out into a thin crackly crust while the interior stays slightly gooey, almost fudgy. The center will look underdone when you pull it but firms up as it cools. Don’t keep baking past 45 minutes hoping it’ll set. It won’t, and you’ll just dry out the crust.

Evaporated milk (not regular milk) is the right call here. Its concentrated dairy solids and slightly caramelized flavor add depth that fresh milk can’t match. It also has less water, which keeps the pie from getting watery during the long bake.

The long beating step (2.5 minutes with an electric mixer) is doing serious work. It dissolves the sugar fully and incorporates air into the eggs, which creates that crackled top during baking. Don’t shortcut it.

Pro Tips

  • Use a deep dish pie shell. Standard shells won’t hold all the filling.
  • Place the pie on a baking sheet to catch any drips during baking.
  • Cool completely before slicing. Warm chess pie runs everywhere.
  • For richer flavor, use real butter instead of margarine.

Directions

Mix sugar, cocoa and margarine.

Stir well.

Add eggs and beat with electric mixer for 2½ minutes.

Add milk and vanilla.

Mix well.

Pour into unbaked Deep Dish pie shell.

Bake for 45 minutes at 325℉ (160℃).

Let cool, and serve.
