Chef Freddy's Simply Peachy Apple Pie

Mixed fruit pie with apples and peaches spiced with apple pie spice. Sweet double-crust deep dish pie baked in 60 minutes total.

Five large apples team up with four juicy peaches, all tossed in apple pie spice and sugar until every slice glistens. The filling piles high in a deep dish crust, gets dotted with butter, then crowned with a top crust brushed with melted butter and more spice.
Bake it until the fruit bubbles and the crust turns golden, and you’ve got the best of both orchard worlds.
Pro Tips
- Use firm apples like Granny Smith that hold their shape when baked
- Toss fruit in flour-sugar mixture right before filling to prevent browning
- Foil the edges for the first 40 minutes to prevent over-browning
- Let it cool at least 30 minutes before slicing or the filling will run

Combine the sugar, flour, and the spice in a small bowl and mix well, then add the sliced fruit, tossing to coat all of the slices.
Spoon the filling into the bottom pie crust in a deep dish pie pan, with the deepest part in the middle.
Pat the 2 tablespoons of butter and arrange them on top of the apples.
Moisten the edges of the bottom crust with water and put the top crust on sealing the edges.
Put strips of aluminum foil around the edges of the pie to prevent scoarching.
Combine the 1 tablespoon butter [melted] and the teaspoons spice and brush the top of the crust, bake for 15 minutes, then 40 minutes.
