Chicken Giblet Vegetable Soup

Ingredients

1ed x gravy, chicken giblet
6 3/4 cups water
1 1/2 teaspoons salt
3/16 teaspoons black pepper
3/4 cup carrot finely diced
3/4 cup onion chopped
3/4 cup celery chopped
9 ounces tomato juice
1 1/2 tablespoons parsley flakes
3 tablespoons parsley leaves minced
3/8 teaspoons paprika
3 tablespoons oatmeal

Directions

Wash giblets and discard all fat pieces.

Place in a large cooking pot with water, and if you must, salt.

Bring to a boil and simmer about 25 minutes.

Add all other ingredients except the oatmeal; simmer soup gently about 30 minutes more.

Remove giblets and chop into small pieces.

Return giblets to soup; add oatmeal, stir, and simmer 5 minutes.

San Francisco Chops

This recipe is fantastic for something different to do with pork chops. We have been making a slight variation of this recipe for years. It's great to see this online! Best when served over white rice and w/french style cut string beans.
