Brown Paper Sack Apple Pie

Brown paper sack apple pie, the old-fashioned trick of baking a Granny Smith pie with buttery crumb topping inside a grocery bag. The enclosed heat steams the apples tender and keeps the crust from burning.

1 hrsGrandma’s trick that sounds wild until you try it. Baking an apple pie inside a closed brown paper grocery bag traps steam and creates a gentle convection oven around the pie, so the apples cook down into silky tenderness while the top crust and crumb topping brown evenly without ever scorching. No foil tents, no crust shields needed.
Granny Smith apples are the right pick here: tart enough to balance the sugar, firm enough to hold shape through a full hour of baking. Thin slices, tumbled with cinnamon and nutmeg, break down into a spoon-tender filling with enough structure to hold a clean slice.
The crumb topping (butter, sugar, flour mashed together) melts into a craggy, caramelized crust as it bakes inside the bag. Pre-baking the bottom crust for 7 minutes prevents a soggy bottom under all that fruit juice.
Kitchen Tips
- Use a NEW, unprinted brown paper grocery bag, recycled bags can carry ink residues.
- Place the bag on a rimmed baking sheet to catch any drips and in case of juice overflow.
- Tuck the bag opening tightly under the pie to trap steam completely.
- Let the pie rest at least 30 minutes before slicing, cutting hot and the filling runs.
Variations
- Mix Granny Smith with Honeycrisp or Braeburn for a more complex apple flavor.
- Add ¼ cup chopped pecans to the crumb topping for extra crunch.
- Stir a tablespoon of bourbon or apple cider into the apple filling for depth.
